SWEET POTATO NACHOS

SERVES: 1

PREP TIME: 10 minutes

TOTAL TIME: 20 minutes

Ingredients:

1 can olive-oil cooking spray
1 m sweet potato, peeled and sliced into thin rounds
1 tsp olive oil
3 oz ground beef or bison
1 tsp chili powder
1 tsp garlic powder
¼ tsp smoked paprika
¼ c canned black beans, drained and rinsed
1 plum tomato, chopped
¼ avocado, chopped
2 Tbsp Cotija or feta cheese (optional)
1 scallion, chopped

Directions:

1.HEAT the oven to 425°F and coat a foil-lined baking sheet with olive oil cooking spray.
2.LAY the sweet potato slices in a single layer on the baking sheet, and coat with more cooking spray. Roast until crisp, about 10 minutes.
3.HEAT the oil in a medium skillet over medium heat.
4. ADD the beef or bison, chili powder, garlic powder, and paprika and cook, breaking the beef up with a wooden spoon, until browned, about 5 minutes.
5. STIR in the black beans to heat through.
6. TRANSFER the sweet potato chips to a plate and top with the beef and bean mixture, tomato, avocado, cheese (if using), and scallion.

Quick tip: Use ground bison instead of ground beef to save about 6 grams of fat per serving.
